After about 10 minutes, I added my Chicken Gumbo Brick along with one-and-a-half containers of water using the plastic container that the Gumbo Brick comes in. I let that simmer about 20 minutes and added 4 peeled and cut up Yukon Gold potatoes (any potatoes will do). Let that simmer about 10 minutes and add the peas (any vegetable you like will do). Simmer another 5 minutes. (I CAREFULLY shredded the thighs inside the pot after they were done so everyone gets some.) GET THAT CORNBREAD READY AND START TA' GRUBBIN'!!!! Hoppin' John Just dice up a few smoked sausages, and put them in the pot with half of a Chicken Gumbo Brick, 4 cups water, half a bag of dry black-eyed peas, and some leftover cooked chicken. That's it! Cook until the peas are tender (45 min to an hour). You don't have to pack your cooked rice into this fancy little mold, but it makes a great presentation! 😊 The cooked chicken kinda fell apart into the gravy; I might omit it next time... Was really trying to clean out the freezer.
